Crafted in Yangjiang, a coastal region in southern China with over 1,400 years of blade-making heritage, this Chinese cleaver reflects the precision and pride of a place known as the knife capital of China. For generations, Yangjiang’s blacksmiths have forged tools trusted by home cooks and professional chefs alike.

This is a cleaver shaped for rhythm, not brute strength — a blade built for the daily dance of chopping, slicing, and refining. With a thin, responsive edge and graceful balance, it excels in preparing vegetables, boneless meats, herbs, and aromatics with clarity and control. It’s the kind of knife that invites precision — and rewards it with flow.

Forged from three layers of stainless steel, including an 80Cr13 high-carbon core, this blade offers exceptional edge retention and durability. The outer layers of softer stainless steel add toughness and corrosion resistance — a union of sharpness and strength. The blade undergoes vacuum heat treatment for optimal mechanical performance, and features a wire-drawn, non-stick finish that resists food buildup and cleans easily.

The handle is shaped from rich rosewood — smooth, secure, and naturally resistant to cold and moisture. It sits comfortably in the hand, helping prevent fatigue and ensuring control even in longer prep sessions.

Though traditional in profile, this cleaver is anything but ordinary. Although this knife carries the shape of a cleaver — a form which in Western kitchens is often associated with force and bone-splitting — it is crafted for precision. This is a Chinese cleaver in the culinary sense: a fine-edged tool designed for clean, controlled cuts.

Using it on bones, frozen foods, or other hard materials may stress the edge and cause minor damage, such as small chips along the blade that compromise its primary purpose: clarity and flow at the cutting board.
